Microwave Muffins in a Minute - on the cheap
Cheap microwave muffins in a minute - can it be done? Yes.. and the best part is, I found all the stuff to make them at WalMart. I was inspired by the awesome (yet slightly expensive per muffin) Kodiak Cakes (also available at Walmart).
Here is what I used:
Martha White's Blueberry Muffin Mix (make sure it is the kind that just requires milk and no eggs or oil)
Powdered Milk (I used Carnation Brand) - I bought the smallest bag they sold
A ceramic mug
A microwave
A ziplock back
Something to measure 2.5 Tablespoons with
Some water
This is super simple, here's how I made 'em:
1. Measured out a bit more than 2.5 Tablespoons of powdered milk into the ziplock bag.
2. Next dumped the contents of the Martha White Blueberry Muffin Mix in the same bag, and mixed it all up.
3. Next I put some of the mix in a mug, about 1/4 to 1/3rd the way full.
4. Then I just eyeballed adding some water till it looked like pancake mix.
5. Finally, you guessed it, I put it in the microwave for a minute - and by "it" I mean the mug with the stuff in it, just to be clear. Microwaving any of the other things you see before you at this point is likely a bad idea.
Now I don't want anybody to blame me for some horrific microwave muffin accident, so I will only suggest that you never, ever make these, no matter how simple and delicious they may be (well delicious may be an overstatement, but for a muffin out of the microwave, not bad). Also stay away from hot things, sharp things and moose's. If however you are a risk taker, rule breaker, and have a urgent need for muffins, it would be unconscionable to stand in your way, so happy to help, you can put me in your will.

Update, I ordered some freeze-dried blueberries and am gonna try amp'ing the mix up with those since that was the only thing that was lacking. The goal is for a cheap powdered muffin mix I can make when I need a muffin and only have a minute or two. I've also been checking into where to find powdered eggs locally which could allow me to use other mixes that require an egg and milk.
