"Ingredients":
- Kirkwood Gluten Free Chicken Bites from Aldi
- Kikkoman Orange Sauce (gluten free) (this can be found cheaper at Walmart if it's in stock)
- Rice 1-2 cups (long grain rice is what I use, but any rice should work)
- Pineapple Chunks with juice
- Butter and your choice of oil

- Skillet (and stovetop)
- Air Fryer
- Rice Cooker
I start with the rice, which I make in a rice cooker (which is a great tool to have). If you don't cook rice much, the best advice for good rice is to rinse it a few times. I don't rinse it till the water is clear, but I do rinse it about three times (which is really just run some water into the pot with the rice, swish it around, drain, rinse and repeat). I then just add a tablespoon or so of butter to the rice and start it in the cooker, with water according to the instructions on the bag (which is usually 1.5 cups water to 1 cup rice).
Next I just put the chicken in the air fryer and cook it according to the instructions on the bag.
After about 5-10 minutes I take the pineapple chunks out of the can (keep the juice) and set them on a paper towel so they can dry out a bit. Then I start a skillet on the stove with about a tablespoon of oil and heat that on medium heat. Once the skillet is hot, I add the pineapple chunks and stir fry them till they have just a bit of brown on them. It's actually easy to burn pineapple, so if your stove runs hot, turn it down a bit. Once the pineapple is done, I turn the heat down to low, and add about half the reserved pineapple juice to the pan and use that to deglaze it and cool things down a bit before adding the sauce. Then I just add the bottle of sauce and simmer that with the pineapple chunks for a few minutes, until the chicken is done in the air fryer.
When the chicken is done in the air fryer, I just add it to the sauce, stir it a bit and then serve it up when the rice is done cooking. Super simple and not much cleanup.
I often make half the bag of chicken bites, with 1 cup of rice, 1 can of pineapple chunks (15.25oz) and half a bottle of the orange sauce. That should serve 4 people, depending on how much they eat, but if you are cooking for 4 big eaters, I think using the whole bag of chicken chunks, a bottle of sauce and 2 cups of rice would work. You can still get by with just one can of pineapple though.
